This selection of dolcetto grapes comes mostly from the vineyard set above the courtyard. Enjoining the South-Eastern exposure, it takes the first morning sun. On the label you can see a man who is harvesting in this particular vineyard, with the sun on the background.
This wine isn’t bottled until the month of August of the year following the vintage. Usually we start to sell it after two further months in which it refines in the bottles..
The scent recalls the ripest red fruits and, especially after some months from the bottling, it becomes more complex, winy and structured almost seeming like the Dolcetto Docg..
It espouses cheeses and meats, such as the traditional mixed bollito but also more elaborated first courses; even if you don’t drink much, this wine is suitable for the entire meal, though scoring a higher alcoholic level. It gets better even up to 3 years or more after the vintage.
